Are there recipes that seem adapted from what you could do with a plantain? Seems like there should be a ton of savory options from many cultures that eat plantains that could be curated! Do you listen to Everything Cookbooks podcast? They talk about “happy robot voice” in episodes where they discuss about voice and headnotes. I think more than one episode that I’ve listened to.

Ah yes, it was definitely the Everything Cookbooks podcast! Thank you. Knew someone here would know!

The fried banana recipes — like the scallops I mentioned, and a recipe for banana fritters — definitely seem like they're close to plantain recipes, but that's about it. No green bananas in a stew or sauce, no beans, no crema, not a lot of spices in general (except for a few baking recipes). Lots of canned pineapple, mayonnaise, canned salmon, etc. But yes, there would be lots of savory options if you looked beyond whatever was the norm in 1930s American cooking (by which I mean American foods based on western European foods). Doesn't seem like the people who wrote these recipes considered that, though.
